M.O.M.'s Recipes and a Contest!
For my 17th Christmas, the last one at home before I went to college, my mother gave me one of the best Christmas presents I have ever received. She gave me a recipe box full of recipes from when I was growing up. Many were recipes I had tasted, some were ones she thought I would like but she had not yet made. I have referred to that box often. I now have a 21 year old stepson who enjoys cooking. So I decided to type all of my mother's recipes and ones I have collected over the years and put them in my computer. There are 460 recipes so far! I then saved these to a disk so I could send it to Bruce and to some others on my list.
As I typed these recipes in, I started making some dishes I hadn't made or had in a while. And they were all so yummy. I have shared some of them here on this blog.
I love getting new recipes. I am not the creative cook my mom is. She started cooking when she was 10 and there wasn't a cookbook in the house, so she made a lot of things up on her own and she still does that. But I enjoy trying new things and sharing recipes with others.

This one is easy. Chicken Salad Wrap. I marinated the chicken in some olive oil and garlic powder, then grilled. Chopped it up and mixed it with some chopped onions and celery. Mixed in a little bit of ranch dressing and then mayo to coat. Put it on a tortilla with lettuce and feta and whatever other veggies I have. YUMMY!!
July 26, 2007 7:12 PMFiesta Salad is my favorite summertime meal. Combine 1 1/2 cups cooked rice, 1/2 cup diced celery, 1/4 cup chopped green pepper, 1/3 cup chopped onion, add some chopped leftover cooked chicken. Blend 1/2 cup lite sour cream with 1/2 tblsp lemon juice, 1 tblsp chili powder, 1 tsp seasoned salt, 1 tsp garlic salt, 1/4 tsp cumin, 1/4 tsp oregano and stir this into rice mixture. Serve chilled.
Garnish this with chopped tomatoes and a dollop of sour cream. Serve on a plate with tortilla chips and salsa.
This recipe's seasonings can also be changed to any flavors you like. Try experimenting with it. Blessings.

1 cup water
1 cup sugar
3 TBSP cornstarch
6 TBSP strawberry jello
1-1/2 pint fresh whole, clean strawberries
1 (9 in.) deep dish pie crust, baked
Blend sugar, cornstarch and water together and cook to almost pudding stage. Add strawberry jello. Place drained whole fresh strawberries into baked pie crust. Pour cooked mixture over berries. Chill 2 hours at least. Top with whipped topping.
